Mack Wright has a mission: to bring sweet potato pie to the masses! Mack Wright makes more than 20 different flavors of sweet-potato pie, from apple crunch to peach to candied yam to rum to the traditional favorite. Wright said he has been making pies for as long as he can remember, and his career has centered around food since he graduated from college in the mid-1970s. After he graduated from college, Wright traveled the world, and he has incorporated his experiences in Hong Kong, France and England into the offerings at Uncle Mac's. The flavor of his pies contain pinches of those influences and dashes of several others. In 1989, he started testing his pie recipes on the soldiers in the Fort Lewis mess hall. He then began offering his pies in commissaries at local military bases. "My pies came from older people who were born at the turn of the (20th) century, and I fused it with Asian ideas and French cuisine," Wright said. Of all his pies, the most popular is the Supreme Sweet Potato Pie, which features pecans and citrus flavors. Pecans also star in his Pecan Sweet potato Pie, which he believes is one of only two such pies in the country. It took Wright years to develop his version, achieving a balance of pecans and sweet potatoes that lets the nuts lie on the top without sinking out of sight. He also adds spices to some of his pie crusts, but don’t bother asking what they are - you’ll only get a smile! "I love to make pies and I love for people to eat my pies," Wright said.
